The cooking of our lenses does not necessarily require prior soaking.
Think all times rinsing quickly with cold water, then place them in a saucepan with 3 times their cold water volume. Do not salt. Bring to a boil and cook covered by 20 to 25 minutes.
If you want soak, leave them 4 hours in cold water and then place them in a boiling water saucepan and cook 10 to 15min.
They are also good hot (sausage lens) as cold for a salad for example.
It is also possible to replace any or part of the meat by the lens thanks to its protein content!
